Home made crêpes with leeks and cheese filling
A simple but delicious recipe which can be served either as a first dish or as a light main meal. Children-friendly as well, it will make them eat one of the most tasty Winter-time vegetables, the leeks. Better to prepare your owncrêpes of course but good quality store-bought ones will definitely save you some time

Braised Amaranth leaves (Vleeta) in light tomato sauce - The King of Summertime Greek greens!
Vleeta or Vlita (Amaranth leaves) is a kind of "horta" (greens) that during the Summer months are very popular around Greece and my personal favourite of all the kinds we have! There are two types in Greece, the red-leafed (or wild grown) and the green which is the cultivated variety. Vleeta are popular not only because of their smooth texture and sweet flavour but also because they are so versatile! My favourite version is the classic recipe where Vleeta are boiled and served as a salad dressed with olive oil and lemon juice or malt vinegar (which, in my opinion, suits them better than the lemon). A lot of people, though, cook them in other ways too. My mother, for example, when she has any leftover vleeta she cooks them in the skillet along with butter and crumbled feta cheese and they are delicious!!! In various areas the vleeta can be part of the filling for various pies instead of using spinach and elsewhere, like the islands, often you'll find them braised along with courgettes, potatoes and/or runner beans. Today's recipe is inspired by the Cretan cuisine and things could not be simpler and easier! Just a few ingredients are enough to have a very tasty vegetarian meal, light and nutritious at the same time! If you have the chance to find Amaranth leaves abroad don't hesitate to cook them at least once in the Greek way and you'll see that I was right

Stuffed aubergines casserole with mildly spiced ground meat and almonds
Inspired by the aubergines "Imam Bayildi" (a recipe shared with the Turkish cuisine) and the aubergines "Papoutsakia" - two of the most popular and delicious traditional dishes in Greece - this casserole is a great idea to enjoy the aubergines during the Summer!! The chef combines the best elements of the two recipes to create a really filling and delicious meal for the whole family!!

Skillet-cooked mellow potatoes, onions and mixed peppers in ouzo-scented light tomato sauce
This is one of those recipes that we love to eat in Greece during the warm months because they are easy and fast to prepare without lacking in taste at all even without any meat involved! A great Summer dish which, if you adjust the quantities of the ingredients accordingly, itcan be served as a really filling main vegetarian meal or as it is to accompany sautéed chicken or white fish

Baked courgettes stuffed with fresh Myzithra cheese and herbs
This a great idea to serve as a first dish during the Summer months when the courgettes are at their best! Simple in ingredients and method and full of aromas and taste! Replace the fresh (sour) Myzithra cheese if you can't find it, with Anthotyro or other soft, semi-salted white cheese

Summertime "stifado" with courgettes and onions in light tomato sauce
A delicious vegetarian Summertime stifado full of taste and aroma! You can also cook okra and aubergines in the same way. In Greece we have a specific type of small onions for the various recipes of "stifado" but any small (boiler) type of yellow, red or white onion (small shallots, pearl onions etc) work just fine! Another good choice are the Italian "Cippolini" onions

Seasonal vegetables "Tourlou" with cheese enclosed in homemade pastry roll
All the flavours of seasonal vegetables and some spicy Greek cheese come together in this delicious recipe! The "Tourlou" ("Briam" if aubergines are not included) vegetarian dish which is one of the most popular Summer recipes around Greece is the idea of this rolled pie. The homemade pastry is really special and you should try it out because you can use it in various recipes but of course you can replace it with store-bought shortcrust pastry which is probably the closest to the original. It is really a very tasty dish this one and it can be served as a first dish or as a main along with seasonal salad. The cheese used here (Greek "Kefalograviera") might be a small problem but if you can't find any then use a semi-hard and semi-salted but rather pungent yellow cheese, something that doesn't melt too easily

Fresh artichokes stuffed with fresh sautéed peas, herbs, spices and feta cheese
Now that artichokes and peas are back in season there are so many delicious recipes we could cook to enjoy these two tasty and nutritious vegetables! This is a really nice recipe which has become one of our favourites through the years although, I must admit, the procedure of preparing the artichokes is not something that I'm fond of:-) The artichokes are double-cooked but only enough so to keep their shape and flavour. The Feta cheese on top goes nicely with these vegetables but if you'd like a strictly vegetarian version then you just omit the cheese without risking losing too much of the taste

Potatoes "yahni" with yoghurt sauce - A refreshing twist to the classic
After all the heavier and meaty dishes during the Easter it's time for something lighter... This is a great vegetarian dish which you can enjoy any time of the year. A bit different to the classic recipe because of the yoghurt. This addition, though, makes the difference since it creates a nice creamy sauce and thelightly sour taste to the dish suits it just fine!

Something different than the usual Sunday-meal recipes for a change. Nutritious, very tasty and easy to prepare it can be served as it is or along with a rice pilaf or fried potatoes. Lachanoryzo - Traditional cabbage and rice stew with Winter vegetables
This is a quite different version of the "Lachanoryzo" my mother does and I'm used to. But after the first time I cooked it I decided that it is a very nice idea for something different since it is enriched with more vegetables which give an extra flavour to the dish. The Feta cheese, once again as it happens with such kind of Greek dishes, is the best company along with some fresh country-style bread and marinated olives. The rice used in this recipe is the one we call in Greece "glacé", which differs from the yellow long grain one (my favourite). Such kind of recipes need a variety which is more starchy than others. I don't expect you to find exactly the same variety of rice but you can always use, for example, the one used for rice pudding or risotto

Traditional stuffed cabbage rolls with cod, rice and fresh herbs served in a creamy avgolemono sauce
This kind of cabbage rolls, the "Sarmades", are a delicious dish coming mainly from North Greece where instead of fresh cabbage leaves they often use pickled cabbage which gives a really different and special flavour. It is a traditional recipe, very popular and beside the classic ground meat version of it, it can also be found cooked witha vegetarian filling. In our case today there is no meat involved butfish along with fresh herbs and rice. The dish ends up with a creamy egg and lemon sauce scented though with freshcardamom for a special taste but also for a beautiful green colour

Velvety cheesy mashed potatoes garnished with caramelised onions
