Local company first to produce Australia’s rarest and highest-grade Manuka honey

Varsity Lakes-based company manuka honey have successfully honed-in on the best hives and processes to produce Australia’s highest-grade Manuka honey. 

Possessing a powerful potency hundreds of times to that of the average Manuka, Biosota’s offering clocks out at 2000+ MGO (methylglyoxal) and is standing out as some of the best in the world.

Produced locally, the third-generation beekeeping family has developed processes that support the health and survival rate of bees. 

“The health and happiness of our bees and their surrounding natural environment has always been our number one priority,” says Mr Zubko.

“As a result, we’ve produced the highest MGO Manuka honey in the world, ranging from 1200+ to 2000+.” 

Achieving high levels of MGO depends on two factors – the species of leptospermum flowers and the production and storge process. 

Honey must mature for 12 months following extraction and it is essential to do so at the right temperature. 

The process of accomplishing maximum maturity is when DHA (Dihydroxyacetone) converts to MGO. When the ratio becomes 1:1, the MGO has completed ageing. 

Biosota’s MGO 2000+ comes from Leptospermum Whitei, which has a lower glucose and fructose ratio, so it remains liquid. 

New Zealand Manuka (Leptospermum scoparium) has a high glucose and fructose ratio and therefore crystallises very easily. 

As honey crystallisation is due to the presence of glucose, New Zealand Manuka honey companies cream their honey so there are many small glucose crystals rather than fewer large crystals. 

Biosota’s Manuka honey is certified-organic, raw, not heat-treated and has been laboratory tested to ensure its potency, purity and quality.
